Don’t run out to buy a box of chocolates for someone special. Devote some time to making your own sweet morsels. This recipe is no-fail and endlessly customizable: roll truffles in toasted coconut, powdered sugar, sprinkles or mini chocolate chips.
Easy Chocolate Cookie Truffles
Ingredients
- 15.5 oz./440 g package vanilla crème sandwich cookies
- 8 oz./225 g reduced-fat cream cheese, softened room temperature
- 3 tbsp. unsweetened cocoa powder
- 9 tbsp. granulated sugar
- 2 (8 oz./225 g) containers dipping chocolate, milk, dark or white
Instructions
- Crush cookies and place half in base of Quick Chef® Pro System. Cover and turn handle to chop into fine pieces and place pieces into a medium bowl.
- Process remaining cookies and add to bowl.
- In a separate bowl, combine cream cheese, 2 tbsp. unsweetened cocoa powder and 6 tbsp. sugar. Add mixture to cookies, stirring well to combine.
- Refrigerate mixture 30 minutes or until firm.
- Scoop out a teaspoon of the mixture and roll into a sphere with your hands, placing finished spheres on a baking sheet lined with Silicone Wonder® Mat.
- Melt dipping chocolate according to package directions.
- Dip truffles into chocolate to fully cover.
- Mix remaining cocoa powder and sugar and use to coat and place on Silicone Wonder® Mat.
- Set aside to firm.
