Aegean Bruschetta
Ingredients
- ½ red bell pepper, seeded and quartered
- ½ yellow bell pepper, seeded and quartered
- ¼ red onion, quartered
- 2 cloves garlic
- 1/3 cup mixed pitted olives
- 1 tsp. fresh oregano leaves
- 1 tsp. fresh thyme leaves
- 1 tbsp. extra virgin olive oil
- ¼ cup reduced-fat feta cheese crumbles
Instructions
- Place peppers, onion, garlic, olives, oregano and thyme in the base of Quick Chef® Pro System fitted with the blade attachment. Turn handle to process until coarsely chopped.
- In fry pan, heat olive oil over medium heat.
- Cook pepper mixture 3–5 minutes, stirring occasionally until vegetables are tender.
- Place in a serving bowl and sprinkle with feta cheese.
