Aegean Bruschetta

A burst of brilliant flavor from the Mediterranean forms the base of this versatile dip to accompany fresh vegetables or to serve on baguette for a fresh take on bruschetta.

Aegean Bruschetta

Ingredients

  • ½ red bell pepper, seeded and quartered
  • ½ yellow bell pepper, seeded and quartered
  • ¼ red onion, quartered
  • 2 cloves garlic
  • 1/3 cup mixed pitted olives
  • 1 tsp. fresh oregano leaves
  • 1 tsp. fresh thyme leaves
  • 1 tbsp. extra virgin olive oil
  • ¼ cup reduced-fat feta cheese crumbles

Instructions

  1. Place peppers, onion, garlic, olives, oregano and thyme in the base of Quick Chef® Pro System fitted with the blade attachment. Turn handle to process until coarsely chopped.
  2. In fry pan, heat olive oil over medium heat.
  3. Cook pepper mixture 3–5 minutes, stirring occasionally until vegetables are tender.
  4. Place in a serving bowl and sprinkle with feta cheese.
