4 Easy 20 Minute Or Less Back To School Recipes

It’s time to break out the apples, textbooks and backpacks because school is back in session!

We know this time of the year can be just as stressful as it is exciting, and whether you’re headed off to college, or you’re a parent sending your kiddos off to class, we have some quick recipes that will give you one less thing to  worry about this week!

These recipes feature our Tupperware® Smart Multi-Cooker, Power Chef® System and Lunch-It-Containers.

Without further ado, let’s eat!

Pizza Pasta Salad

(kid friendly)

 

Serves: 4

Serving size: 1 cup

Prep time: 10 minutes

Cook time: 12 minutes

Total time: 22 minutes

 

8 cups water

2 cups rotini pasta

2 tsp. salt

1 cup grape tomatoes, sliced in quarters

1 cup pearl mozzarella

½ cup pepperoni, diced

½ tsp. oregano

1/8 tsp. pepper

½ cup strawberries, quartered

½ cup animal crackers

 

  1. In base/water reservoir of Tupperware® Smart Multi-Cooker, place water, pasta and salt. Stir gently and cook in microwave on high power, uncovered, 10–12 minutes or until pasta is al dente.
  2. At the end of cooking time, strain pasta using shielded colander and return pasta to base, add remaining ingredients and mix well.
  3. Place 1 cup of pasta in Lunch-It Container with strawberries and animal crackers. Store in refrigerator or Insulated Lunch Bag until ready to eat. Serve cold. Store remaining pasta in 6½-cup/1.5 L container up to three days.

 

Pulled Chicken Two Ways

 

Serves: 2

Serving size: ½ portion

Prep time: 10 minutes

Cook time: 8 minutes

Total time: 18 minutes

 

1 skinless boneless chicken breast

½ tsp. salt

¼ tsp. pepper

¾ cup barbecue sauce of choice

1 flour tortilla

1 Kaiser roll

4 slices of cheese

 

  1. Season chicken with salt and pepper, and place in shielded colander of the Tupperware® Smart Multi-cooker.
  2. Add water to base/water reservoir to max-fill line for steaming. Place shielded colander on top of base, cover and microwave for 6 minutes on high power. At the end of cooking time, carefully remove from microwave and let stand 2 minutes. Check with thermometer to make sure chicken internal temperature reaches 165° F/75° C
  3. Once chicken has cooled enough to handle, place inside base of Power Chef® System fitted with the blade attachment, replace cover and pull cord until chicken is shredded.
  4. Place chicken in medium bowl and add barbecue sauce of choice. Divide chicken in two servings. Spread half in flour tortilla and top with two slices of cheese. Store in Large Lunch-It® Container and serve with 2 cups salad and ½ cup dressing of your choice.
  5. Use remaining chicken in Kaiser roll and top with two slices of cheese. Store in Round Keeper and place trail mix of choice in the Smidget Container.

 

Chickpea Salad Sandwiches

(adult)

Serves: 6

Serving size: ½ cup

Prep time: 15 minutes

 

¼ cup sunflower seeds

1 celery stalk

¼ red onion

1 tsp. Dijon mustard

Juice of 1 lemon

15 oz./425 g can of chickpeas, drained

1 tsp. salt

½ tsp. pepper

2 slices of bread of choice

¾ cup trail mix

½ cup pretzels

 

  1. In base of Power Chef® System fitted with the blade attachment place sunflower seeds, celery and red onion. Replace cover and pull cord until finely chopped. Add remaining ingredients and pull cord until evenly combined and chickpea salad is chunky.
  2. Spread ½ cup of chickpea salad on sliced bread and top with remaining slice of bread. Store in Lunch-It® Container and place dried fruit and pretzels in separate compartments. Seal and store in Insulated Lunch Bag until ready to eat.
  3. Store remaining chickpea salad in 4½-cup/1.1 L medium Fresh N’ Cool container for up to three days.

 

Banana Pinwheels

(kid friendly)

Serves: 1

Serving size: 1 tortilla

Prep time: 10 minutes

 

1 large banana

1 large flour tortilla

2½ tbsp. almond butter

¾ cup seedless grapes

½ cup cheese, cut into cubes

 

  1. Place flour tortilla on a flat surface and spread almond butter over the whole tortilla until it is fully covered.
  2. Peel banana and lay on edge of tortilla.
  3. Roll banana in tortilla.
  4. Slice tortilla into 1″/2.5 cm pinwheels, and arrange in Lunch- It® Arrange grapes and cheese in separate compartments, seal and store in lunchbox until ready to eat.
