Ballgame Salad
Ingredients
- ¼ cup ketchup
- ¼ cup low-fat mayonnaise
- ¼ cup sweet pickled relish
- 1 tbsp. whole-grain mustard
- 1 tsp. vegetable oil
- 6 hot dogs, cut into 1-inch slices
- 8 oz./225 g bagged coleslaw mix
- 10 oz./285 g bagged mixed lettuce
- 4 small vine-ripe tomatoes, diced
- ½ cup gherkin pickles, diced
- salt and pepper
Instructions
- Whisk together ketchup, mayonnaise, relish and mustard. Set aside or refrigerate, if not using immediately.
- Heat vegetable oil in fry pan over medium-high heat.
- Add the hot dog pieces and cook for 5 minutes or until hot dogs are heated through.
- In a serving bowl, toss lettuce, coleslaw mix, tomatoes, pickles and prepared dressing together. Top with hot dog pieces.
- Serve immediately.
